Calcium gluconate CAS 299-28-5 is an organic calcium salt, chemical formula is C12H22O14Ca, appearance is white crystalline or granular powder, melting point 201 ℃ (decomposition), odorless, tasteless, easily soluble in boiling water (20g/100mL), slightly soluble in cold water (3g/100mL, 20 ℃), insoluble in organic solvents such as ethanol or ether. The aqueous solution appears neutral (pH approximately 6-7). Calcium gluconate is mainly used as calcium fortifier and nutrient, buffer, curing agent and chelating agent in food.

Application
